What kind of latency should I expect with the Morph, both over USB and Bluetooth?

It's hard to say since a lot of it depends on the Bluetooth stack on the other side, but the latency is approximately 5 milliseconds on average in USB and approximately 20 milliseconds on average for Bluetooth.
